Ingredients
  

Crust
  • 1 cup all-purpose flour
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter softened
  • 1/4 teaspoon salt
Cheesecake Filling
  • 16 ounces cream cheese softened
  • 1/2 cup sour cream
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
Strawberry Topping
  • 2 cups fresh strawberries sliced
  • 1/4 cup granulated sugar for macerating
  • 1 tablespoon lemon juice

Method
 

Prepare the Crust
  1. Preheat the oven to 350°F (175°C). In a mixing bowl, combine flour, sugar, butter, and salt. Mix until crumbly.
  2. Press the mixture into the bottom of a greased 9x13 inch baking pan. Bake for 10-12 minutes or until lightly golden.
Make the Cheesecake Filling
  1. In a large bowl, beat the cream cheese until smooth. Add sour cream, sugar, eggs, and vanilla. Mix until well combined.
  2. Pour the cheesecake filling over the baked crust and spread evenly.
  3. Bake for 30-35 minutes or until the center is set. Remove from the oven and let cool.
Prepare the Strawberry Topping
  1. In a bowl, combine sliced strawberries, sugar, and lemon juice. Let sit for 10-15 minutes to macerate.
  2. Once the cheesecake is cool, top with the macerated strawberries.
Serve
  1. Refrigerate for at least 2 hours before slicing into bars. Serve chilled.
