Method
Slow Cook
- Place raw chicken breasts at the bottom of a 6-quart slow cooker.
- Add drained white beans, sweet corn, diced green chiles, diced onion, minced garlic, cumin, chili powder, oregano, paprika, salt, pepper, and chicken broth over the chicken.
- Place cubed cream cheese right on top. Cover and cook on LOW for 6-7 hours or on HIGH for 3.5-4 hours until chicken is fork-tender.
Shred & Melt Cheese
- Remove chicken breasts to a plate and shred easily with two forks. Whisk the hot chili broth vigorously with a whisk to melt the cream cheese into a silky, creamy sauce.
- Return shredded chicken back to the slow cooker along with fresh lime juice and 1 cup of shredded Monterey Jack cheese. Stir well and let sit on warm for 10 minutes until cheese melts.
- Ladle into wide bowls and garnish generously with extra Monterey Jack, sliced jalapeños, diced avocado, cilantro, and warm tortilla chips.
