Ingredients
  

For the Stew
  • 2 pounds Beef chuck roast a well-marbled cut
  • 3 medium Carrots diced
  • 4 medium Potatoes Yukon Gold, diced
  • 2 stalks Celery diced
  • 1 large Onion diced
  • 3 cloves Garlic minced
  • 4 cups Beef broth low-sodium
  • 2 tablespoons Tomato paste
  • 2 leaves Bay leaves
  • 1 teaspoon Thyme fresh or dried
  • 1 teaspoon Black pepper freshly cracked
For Garnish
  • 2 tablespoons Fresh parsley chopped

Method
 

Preparation
  1. Chop the beef into bite-sized pieces and trim any excess fat.
  2. Dice the onions, carrots, and potatoes.
Cooking
  1. Season the beef with salt and pepper, rubbing it in well.
  2. Sear the beef in a hot skillet for 5-7 minutes until browned.
  3. Layer the seared beef in the slow cooker with chopped onions, carrots, and potatoes.
  4. Pour beef broth over the ingredients until just covered.
  5. Cover and set the slow cooker on low for 6-8 hours or high for 3-4 hours.
  6. If desired, mix cornstarch with cold water and stir in during the last 30 minutes to thicken.
