Method
 

Baking Instructions

  2. Mix the wet ingredients: combine pumpkin puree, egg, and peanut butter until smooth.
  3. Combine the dry ingredients: whisk together whole wheat flour, baking powder, and cinnamon.
  4. Fold the dry ingredients into the wet mixture gently until just combined.
  5. Scoop the batter into a lined muffin tin, filling each cup about two-thirds full.
  6. Bake for 20-25 minutes, or until a toothpick inserted comes out clean.
  7. Cool the cupcakes completely on a wire rack before serving.
