  • 1 cup lemon juice freshly squeezed
  • 1/4 cup olive oil
  • 3 cloves garlic minced
  • 2 tablespoons fresh herbs thyme, rosemary, parsley

For the Chicken
  • 4 pieces chicken breasts or thighs
For Garnish
  • 1 slices lemon for grilling
  • 2 tablespoons chopped parsley for topping

Method
 

Marinating and Baking
  1. Marinate the chicken breasts in a mixture of fresh lemon juice, olive oil, minced garlic, and a medley of herbs like rosemary and thyme for at least 30 minutes.
  2. Preheat your oven to 400°F (200°C) while the chicken marinates.
  3. Arrange the marinated chicken on a baking sheet lined with parchment paper.
  4. Bake the chicken for 25-30 minutes, or until it reaches an internal temperature of 165°F (75°C).
  5. Rest the chicken for about 5 minutes after removing it from the oven.
