Ingredients

Fluffy Buttermilk Batter
  • 2 cups all-purpose flour
  • 3 tbsp dark brown sugar
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1 tsp ground cinnamon
  • 1/2 tsp fine sea salt
  • 1 3/4 cups cold cultured buttermilk
  • 2 large eggs (room temperature)
  • 4 tbsp unsalted butter (melted and cooled)
  • 1 tsp pure vanilla extract
Caramelized Cinnamon Apple Topping
  • 2 large Honeycrisp apples (peeled and thinly sliced)
  • 2 tbsp unsalted butter
  • 2 tbsp brown sugar
  • 1/2 tsp ground cinnamon
  • 1 pinch ground nutmeg and sea salt
  • 1/3 cup pure warm maple syrup and toasted chopped pecans for serving

Method

Sauté Caramelized Apples
  1. Melt 2 tablespoons of butter in a skillet over medium heat. Add sliced Honeycrisp apples, brown sugar, cinnamon, and nutmeg.
  2. Cook for 5-7 minutes, stirring occasionally, until apples are tender, fragrant, and coated in a glossy caramel glaze. Remove from heat and keep warm.
Whisk Batter & Griddle Pancakes
  1. In a large bowl, whisk together flour, brown sugar, baking powder, baking soda, cinnamon, and salt.
  2. In a separate pitcher, whisk buttermilk, eggs, melted butter, and vanilla. Pour wet ingredients into dry ingredients and fold gently with a spatula until just combined (leave small lumps; do not overmix!).
  3. Heat a lightly buttered cast-iron skillet or griddle over medium-low heat. Pour 1/3 cup of batter per pancake.
  4. Cook for 2-3 minutes until bubbles form on the surface and pop. Flip gently and cook for an additional 1-2 minutes until golden brown and cooked through.
  5. Stack pancakes high, spoon warm caramelized apples generously over the top, drizzle with maple syrup, sprinkle toasted pecans, and serve immediately.
