Ingredients

Hash Skillet Ingredients
  • 6 slices thick-cut applewood smoked bacon (diced)
  • 2 medium sweet potatoes (peeled and diced into 1/2-inch cubes)
  • 1 medium red bell pepper (seeded and diced)
  • 1/2 medium yellow onion (finely diced)
  • 2 cups fresh baby spinach (roughly chopped)
  • 4 large pasture-raised eggs
  • 2 cloves garlic (minced)
  • 1 tsp smoked paprika
  • 1/2 tsp garlic powder and onion powder
  • 1/2 tsp sea salt and freshly cracked black pepper
  • 2 tbsp fresh chives (finely sliced for garnish)

Method

Crisp Bacon & Render Fat
  1. Heat a 12-inch cast-iron skillet over medium heat. Add diced bacon and cook until golden brown and crispy (6-7 minutes).
  2. Use a slotted spoon to transfer cooked bacon to a paper towel-lined plate, leaving 2 tablespoons of rendered bacon drippings in the skillet.
Caramelize Sweet Potatoes & Peppers
  1. Add diced sweet potatoes to the hot bacon drippings. Spread into a single layer and cook undisturbed for 4-5 minutes to develop a golden-brown crust.
  2. Stir and add diced bell peppers, onion, smoked paprika, garlic powder, onion powder, salt, and black pepper. Cook, stirring occasionally, for 8-10 minutes until sweet potatoes are fork-tender and caramelized.
  3. Add minced garlic and chopped baby spinach, stirring for 1 minute until wilted. Stir half of the crispy bacon back into the hash.
Nestle Eggs & Finish
  1. Use a wooden spoon to create 4 small wells in the sweet potato hash. Crack one egg gently into each well.
  2. Cover the skillet with a lid or baking sheet, reduce heat to medium-low, and cook for 3-5 minutes until egg whites are set but yolks remain gloriously runny.
  3. Remove from heat, scatter remaining crispy bacon and sliced fresh chives over the top, and serve immediately straight from the skillet.
