Method
Crisp Pancetta & Roast Sprouts
- Preheat oven to 425°F (220°C). In a skillet over medium heat, fry diced pancetta until golden and crisp (5-6 minutes). Remove pancetta to a plate with a slotted spoon, reserving 2 tablespoons of warm rendered fat.
- Toss halved Brussels sprouts with olive oil, garlic powder, salt, and pepper on a rimmed baking sheet. Arrange cut-side down in a single layer.
- Roast for 18-22 minutes until outer leaves are charred and crispy and centers are tender.
Whisk Warm Dressing & Assemble
- In a small bowl, whisk reserved warm pancetta drippings with maple syrup, apple cider vinegar, Dijon mustard, minced garlic, salt, and pepper until emulsified.
- Transfer hot roasted Brussels sprouts to a wide serving bowl. Scatter crispy pancetta, dried cranberries, and toasted almonds over top.
- Drizzle warm maple vinaigrette over the salad, toss gently, and finish with shaved Pecorino Romano curls. Serve immediately while warm.
