Ingredients

Salad & Chicken
  • 2 large boneless skinless chicken breasts (sliced into cutlets)
  • 1 tbsp olive oil
  • 1/2 tsp garlic powder, smoked paprika, salt, and black pepper
  • 6 cups fresh mixed greens or baby spinach
  • 2 medium Honeycrisp or Gala apples (thinly sliced)
  • 1/2 cup candied pecans (roughly chopped)
  • 1/3 cup dried cranberries
  • 4 oz creamy goat cheese or sharp white cheddar (crumbled)
Maple Dijon Vinaigrette
  • 1/3 cup extra virgin olive oil
  • 2 tbsp pure maple syrup
  • 2 tbsp apple cider vinegar
  • 1 tbsp dijon mustard
  • 1 clove garlic (finely minced)
  • 1/4 tsp sea salt and freshly cracked black pepper

Method

Prepare & Sear Chicken
  1. Season chicken breast cutlets generously with olive oil, garlic powder, smoked paprika, salt, and black pepper.
  2. Heat a heavy skillet over medium-high heat. Sear chicken for 4-5 minutes per side until golden brown and cooked through (internal temp 165°F / 74°C). Rest 5 minutes, then slice into thin strips.
Whisk Dressing & Assemble Salad
  1. In a mason jar or small bowl, whisk together extra virgin olive oil, pure maple syrup, apple cider vinegar, dijon mustard, minced garlic, salt, and pepper until emulsified.
  2. In a large shallow salad bowl, lay down a fresh bed of mixed greens. Arrange sliced warm chicken, crisp apple slices, candied pecans, dried cranberries, and crumbled goat cheese across the top.
  3. Drizzle generously with maple dijon vinaigrette right before serving and toss gently.
