Method
Sear the Chicken Cutlets
- Pat chicken cutlets dry and season both sides with Italian seasoning, garlic powder, salt, and black pepper.
- Heat olive oil in a large skillet over medium-high heat. Add chicken cutlets and sear undisturbed for 4-5 minutes per side until deeply golden and cooked through (165°F / 74°C). Transfer chicken to a warm plate and set aside.
Build Creamy Garlic Sauce & Finish
- Reduce heat to medium. Melt butter in the skillet drippings. Add minced garlic and sun-dried tomatoes, sautéing for 1 minute until deeply fragrant.
- Pour in chicken broth to deglaze the skillet, scraping up any delicious browned bits. Simmer for 1 minute to reduce slightly.
- Reduce heat to low and stir in heavy cream and grated parmesan cheese. Simmer gently for 2-3 minutes until the sauce thickens into a rich, velvety consistency.
- Add fresh baby spinach and stir for 1-2 minutes until wilted. Return chicken cutlets and resting juices back to the skillet, spooning hot sauce over each cutlet. Garnish with fresh basil and serve warm over pasta or crusty bread.
