Ingredients
12 ounces spaghetti (or preferred pasta)
4 cups marinara sauce
2 cups assorted vegetables (bell peppers, zucchini, mushrooms, spinach)
2 cups shredded mozzarella cheese
1 cup grated Parmesan cheese
1 teaspoon dried oregano
1 teaspoon dried basil
Salt and pepper to taste
Instructions
Cook the Past: Boil water with salt; cook spaghetti until al dente (8-10 minutes). Drain, reserving half a cup of pasta water.
Sauté Vegetables: In a skillet with olive oil, sauté chopped vegetables for about 5-7 minutes until slightly softened.
Combine Ingredients: In a large bowl, mix cooked pasta, marinara sauce, sautéed veggies, herbs, and reserved pasta water until evenly coated.
Assemble & Bake: Preheat oven to 375°F (190°C). Layer half of the pasta mixture in a baking dish, top with half the cheeses, repeat layers. Cover with foil and bake for 25 minutes; remove foil and bake for an additional 15-20 minutes until golden.
