  • 2 tbsp olive oil
  • 1 cup bell peppers, diced (mixed colors)
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 cup white or brown rice

Instructions

  1. Rinse shrimp under cold water and pat dry. Dice bell peppers and onion into bite-sized pieces.
  2. Cook rice according to package instructions.
  3. In a large skillet, heat olive oil over medium heat. Sauté onion and bell peppers until tender (about 5 minutes).
  4. Add minced garlic and shrimp to the skillet. Sprinkle with Cajun seasoning and cook until shrimp turn pink (approximately 3-4 minutes).
