  • 2 tbsp kosher salt
  • 2 tsp freshly ground black pepper
  • 4 garlic cloves, minced
  • 2 tbsp fresh rosemary, chopped
  • 2 tbsp olive oil

Instructions

  1. Preheat your oven to 450°F (232°C).
  2. Pat the prime rib dry with paper towels and rub it all over with olive oil.
  3. Generously season the roast with salt and pepper, then massage in the minced garlic and rosemary.
  4. Place the roast bone-side down on a roasting rack in a baking pan. Roast at high heat for 20 minutes.
  5. Reduce oven temperature to 325°F (163°C) and continue roasting for approximately 1 hour or until it reaches an internal temperature of 130°F (54°C) for medium-rare.
  6. Remove the roast from the oven and let it rest for at least 20 minutes before slicing against the grain.
