Ingredients

– 2 cups all-purpose flour

– 1 cup granulated sugar (or brown sugar)

– 2 teaspoons baking powder

– 1 teaspoon baking soda

– ½ teaspoon salt

– 2 large eggs

– ¾ cup vegetable oil or melted coconut oil

– 1 cup grated carrots


Instructions

1. Preheat the oven to 350°F (175°C) and prepare a muffin tin by greasing it or lining it with paper liners.

 

2. In a large bowl, mix together flour, sugar, baking powder, baking soda, and salt.

 

3. In another bowl, beat the eggs and blend in the oil and applesauce until smooth.

 

4. Gradually combine wet ingredients with dry ingredients until just mixed; do not overmix.

 

5. Fold in grated carrots, nuts, and raisins until evenly distributed.

 

6. Fill muffin cavities about two-thirds full and bake for 20-25 minutes or until golden brown and a toothpick comes out clean.

 

Notes

– For added flavor, consider mixing in shredded coconut or spices like cinnamon and nutmeg.

 

– To make these muffins vegan, substitute eggs with flaxseed meal mixed with water.
