- 1/2 cup freshly squeezed orange juice
- 2 tsp ground cumin
- 2 tsp chili powder
- 2 bay leaves
- Salt and pepper to taste
- 1 tbsp olive oil
Instructions
- Cut pork shoulder into large chunks (about 2-3 inches) and season generously with salt and pepper.
- Set Instant Pot to 'Sauté' mode. Add olive oil, then sauté onions and garlic until translucent (3-4 minutes).
- Add seasoned pork, orange juice, cumin, chili powder, bay leaves, and any additional spices to the pot.
- Secure the lid and set to 'Sealing.' Select 'Manual' high pressure for 30 minutes.
- After cooking, let pressure release naturally for about 15 minutes before switching to 'Venting.'
- Remove pork and shred it using two forks. Return to the pot for moisture or broil on a baking sheet for crispiness.
