- 1/4 cup achiote paste
- 1/2 cup pineapple juice
- 4 cloves garlic, minced
- 1 tsp ground cumin
- 1 tsp dried oregano
- Salt and pepper to taste
- 12 corn tortillas
- 1 cup fresh pineapple, diced
- 1/2 cup diced white onion
- 1/2 cup chopped cilantro
- Juice of 2 limes
Instructions
- 1. Marinate the Pork: In a bowl, mix achiote paste, pineapple juice, garlic, cumin, oregano, salt, and pepper. Coat pork chunks in marinade and refrigerate for at least 2 hours or overnight.
- 2. Grill the Meat: Preheat your grill over medium-high heat. Cook marinated pork until charred and cooked through (15–20 minutes).
- 3. Add Pineapple: Grill pineapple pieces alongside the pork during the last 5 minutes for added sweetness.
- 4. Warm Tortillas: Heat corn tortillas on another grill or skillet until soft.
- 5. Assemble Tacos: Place grilled pork and pineapple on each tortilla. Top with onion and cilantro; squeeze lime juice over tacos.
