- 12 large fresh oysters
- 4 tbsp unsalted butter
- 2 shallots, finely chopped
- 1 cup fresh spinach, chopped
- 1/2 cup plain breadcrumbs
- 1/2 cup grated Parmesan cheese
- 2 tbsp fresh parsley, chopped
- 1 tsp fresh thyme, chopped
- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Carefully shuck each oyster and place them on the prepared baking sheet.
- In a skillet over medium heat, melt the butter and sauté the shallots until soft (about 2 minutes). Add spinach and cook until wilted (another 2 minutes).
- In a bowl, combine the sautéed mixture with breadcrumbs, Parmesan cheese, parsley, thyme, salt, and pepper.
