Ingredients
- 1 pound (450 grams) puff pastry
- 2 cups (500 ml) whole milk
- 4 large egg yolks
- 1/2 cup (100 grams) granulated sugar
- 1/4 cup (30 grams) cornstarch
- 1 tablespoon pure vanilla extract
- 1/2 cup (60 grams) powdered sugar
- Optional: Fresh berries for garnish
Instructions
1. Preheat oven to 400°F (200°C). Roll out puff pastry to 1/8 inch thick and cut into rectangles (3×5 inches). Place on parchment-lined baking sheets, prick with a fork, and weigh down with another tray.
2. Bake for 15-20 minutes until golden brown. Let cool completely on wire racks.
3. While cooling, prepare the vanilla custard: Heat milk until steaming. Whisk egg yolks and sugar until pale, then add cornstarch. Gradually mix in hot milk to temper eggs and return to saucepan. Stir constantly over medium-low heat until thickened, then stir in vanilla extract. Cool completely.
4. Assemble by layering baked pastry rectangles with custard cream in between, finishing with custard on top. Dust with powdered sugar and garnish with fresh berries if desired.
Notes
– Ensure all ingredients are at room temperature for best results.
– Chill layers before baking to enhance flakiness.
