  • 34 boneless, skinless chicken breasts (about 1.5 lbs)
  • 1 cup long-grain white rice
  • 1 ½ cups low-sodium chicken broth
  • 1 can (15 oz) black beans, rinsed
  • 1 cup diced fresh bell peppers
  • 1 packet taco seasoning
  • ½ cup sour cream
  • 1 cup shredded cheese
  • 1 cup salsa

Instructions

  1. Prepare your ingredients: Chop bell peppers and rinse black beans.
  2. Set the Instant Pot to 'Sauté' mode. Add oil and brown seasoned chicken for about 5 minutes.
  3. Stir in taco seasoning, rice, black beans, and chicken broth.
  4. Close the lid and set to 'Manual' on high pressure for 10 minutes; allow natural release for 5 minutes before quick releasing any remaining pressure.
  5. Fluff the rice and mix with the chicken and beans.
