  • 1 cup old-fashioned rolled oats
  • 1 cup all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 3/4 cup unsalted butter (softened)
  • 1/2 cup brown sugar (packed)
  • 1/4 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup butterscotch chips

Instructions

  1. Preheat oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a bowl, mix oats, flour, baking soda, and salt; set aside.
  3. In a large bowl, beat butter with both sugars until fluffy. Add eggs one at a time and stir in vanilla.
  4. Gradually mix dry ingredients into the wet mixture until just combined. Fold in butterscotch chips.
  5. Drop rounded tablespoons of dough onto prepared sheets, spacing them two inches apart. Bake for 10-12 minutes until golden around the edges. Cool on sheets for five minutes before transferring to wire racks.
