- 2 lbs pork shoulder, cut into large chunks
- 2 cups canned hominy (or 1 cup dried hominy, soaked overnight)
- 4 dried guajillo chilies
- 2 dried ancho chilies
- 4 cloves garlic
- 1 large onion, chopped
- 1 tsp ground cumin
- Salt and pepper to taste
- Lime wedges for garnish
Instructions
- Season pork with salt and pepper. In a large pot over medium heat, sear pork until browned on all sides (about 5 minutes).
- While pork cooks, soak guajillo and ancho chilies in hot water for 15 minutes. Remove stems and seeds, then blend with garlic until smooth.
- Add chopped onion to the pot with pork and sauté until translucent (about 4 minutes). Stir in chili paste and cumin.
- Pour in enough chicken stock to cover the mixture by an inch. Add hominy and bring to a boil; reduce heat to low and simmer uncovered for about 2 hours until pork is tender.
- Adjust seasoning as needed. Serve hot topped with shredded cabbage, sliced radishes, cilantro, and lime juice.
