Ingredients
1 pound boneless, skinless chicken breasts
1/2 cup all-purpose flour
3 tablespoons extra virgin olive oil
1/4 cup freshly squeezed lemon juice
1/2 cup dry white wine (such as Sauvignon Blanc)
2 tablespoons drained capers
Salt and pepper to taste
Fresh parsley for garnish
Instructions
Pound the chicken breasts to about 1/4 inch thickness. Season with salt and pepper, then dredge in flour.
Heat olive oil in a skillet over medium-high heat. Sauté the chicken for about 3 minutes on each side until golden brown and cooked through (165°F).
Remove chicken from the skillet. In the same pan, add white wine and lemon juice; simmer for 5 minutes. Stir in capers.
