Ingredients
1 lb boneless, skinless chicken breast
3/4 cup unsalted cashews
2 medium bell peppers (sliced)
1 cup snow peas
1/4 cup soy sauce
2 cloves garlic (minced)
1 tbsp fresh ginger (grated)
1 tbsp honey
2 tsp cornstarch (mixed with water)
Vegetable oil for cooking
Instructions
Marinate diced chicken in soy sauce, honey, garlic, and ginger for at least 15 minutes.
In a large skillet or wok, heat vegetable oil over medium-high heat. Stir-fry the marinated chicken until golden brown; set aside.
In the same pan, sauté bell peppers and snow peas for about 3 minutes until slightly tender.
