Ingredients
1 lb flank steak or sirloin, thinly sliced
3 cups cooked long-grain rice (preferably day-old)
1 cup diced carrots
1 cup diced bell peppers
½ cup peas
2–3 green onions, chopped
¼ cup low-sodium soy sauce
2 large eggs
1 tablespoon sesame oil
Garlic and black pepper to taste
Instructions
1. Marinate the beef in soy sauce, sesame oil, minced garlic, and black pepper for 15-30 minutes.
2. Heat a tablespoon of oil in a wok over medium-high heat. Scramble the whisked eggs until just set and remove from pan.
3. Stir-fry marinated beef in batches until browned; remove and set aside.
4. In the same pan, add vegetables and cooked rice; stir-fry for about 5 minutes.
5. Return the beef and scrambled eggs to the pan, drizzle with additional soy sauce, and mix well. Heat through before serving.
Notes
Feel free to add any of your favorite vegetables such as corn or broccoli.
For an extra kick, incorporate chili paste or fresh ginger during cooking.
