  • 2 medium zucchinis (about 300g)
  • 2 tbsp olive oil
  • ½ cup grated Parmesan cheese
  • 1 tsp garlic powder
  • ½ tsp salt
  • ¼ tsp black pepper
  • ½ cup Panko breadcrumbs

Instructions

  1. Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. Slice zucchinis into fry-like shapes and pat dry with paper towels.
  3. In a large bowl, toss zucchini strips with olive oil, garlic powder, salt, pepper, and half of the Parmesan cheese until well coated.
  4. Coat each zucchini fry in Panko breadcrumbs and arrange them on the baking sheet in a single layer.

  6. Sprinkle remaining Parmesan over hot fries before serving.
