Ingredients
200g Medjool dates (pitted)
190g all-purpose flour
1 tsp baking powder
100g unsalted butter (room temperature)
150g light brown sugar
2 large eggs
1 tsp vanilla extract
For the toffee sauce: 150g dark brown sugar, 75g unsalted butter, and 250ml heavy cream
Instructions
Preheat oven to 180°C (350°F). Grease an 8-inch baking dish.
Soak chopped dates in boiling water for 15 minutes until soft.
Cream butter and brown sugar until fluffy. Add eggs one at a time and mix in vanilla.
Fold in half the flour and baking powder, then the mashed dates, followed by the remaining flour.
Pour batter into the greased dish and bake for 30-35 minutes until golden.
For the toffee sauce, combine brown sugar and butter over medium heat until melted. Stir in cream and simmer for a few minutes.
