Instructions
- Preheat oven to 400°F (200°C). Toss diced butternut squash with olive oil, salt, and pepper on a parchment-lined baking sheet. Roast for 25-30 minutes until golden brown.

- In a small bowl, whisk together maple syrup, Dijon mustard, apple cider vinegar, olive oil, salt, and pepper until emulsified.
