46 bone-in, skin-on chicken thighs (23 pounds)

1.5 pounds Yukon Gold or red potatoes, cut into chunks

¼ cup extra virgin olive oil

Seasonings: garlic powder, onion powder, paprika, salt, black pepper, dried thyme, rosemary

Juice of 1 medium lemon


Instructions

Preheat oven to 425°F (220°C).

In a bowl, mix olive oil, seasonings, and lemon juice.
