Ingredients

– 1 whole chicken (4-5 pounds)

– 2 tablespoons olive oil

– Salt and pepper

– 1 teaspoon garlic powder

– 1 teaspoon onion powder

– 1 teaspoon paprika

– 1 teaspoon dried thyme (or rosemary)

– 1 cup low-sodium chicken broth

– 1 whole lemon (cut into wedges)


Instructions

1. Rinse and pat dry the chicken. Season the inside cavity with salt and pepper, insert lemon wedges.

 

2. Mix olive oil with spices; rub all over the chicken, including under the skin.

 

3. Set Instant Pot to sauté mode, heat olive oil, then brown the chicken on both sides for about 5 minutes each.

 

4. Pour in broth, place the trivet inside, and set the chicken on top. Secure lid and cook on high pressure for 6-8 minutes per pound.

 

5. Allow natural pressure release for about 10 minutes before quick releasing any remaining pressure.

 

Notes

– For extra crispy skin, broil the cooked chicken in the oven for 5-10 minutes after cooking.
