Ingredients

500 grams fresh spinach

250 grams paneer, cubed

1 medium onion, finely chopped

2 medium tomatoes, chopped

Spices: cumin seeds, garam masala, turmeric powder, red chili powder

50 ml heavy cream (or yogurt)


Instructions

1. Wash and blanch spinach in boiling water for 2-3 minutes, then cool in ice water. Blend into a smooth puree.

2. In a pan, heat oil and sauté cumin seeds and onions until golden. Add tomatoes and cook until soft.

3. Stir in spices followed by the spinach puree; simmer for a few minutes.

4. Add paneer cubes and cream; gently combine and heat through

Notes

For added richness, try incorporating cashew cream or adjusting spice levels to your preference. For a vegan option, substitute paneer with tofu.
