- 1 lb lean ground beef
- 8 slices thick-cut bacon, chopped
- 2 cups elbow macaroni
- 2 cups shredded sharp cheddar cheese
- 1 can (14.5 oz) diced tomatoes with green chilies
- 1 medium onion, finely chopped
- ½ cup ketchup
- 1 tbsp yellow mustard
Instructions
- Preheat oven to 350°F (175°C) and lightly grease a 9×13 inch baking dish.
- Cook elbow macaroni in boiling salted water until al dente; drain and set aside.
- In a skillet over medium heat, brown ground beef for about 7-10 minutes; add onion halfway through cooking until tender. Drain excess fat.
- In another pan, cook chopped bacon until crispy, then drain on paper towels.
- In a large bowl, combine cooked pasta, beef mixture, bacon bits, diced tomatoes (with juices), ketchup, mustard, and half of the cheese. Mix well.
- Transfer the mixture to the prepared baking dish and top with remaining cheese. Bake for 25-30 minutes or until bubbly and golden brown.
