  • 1 lb lean ground beef
  • 8 slices thick-cut bacon, chopped
  • 2 cups elbow macaroni
  • 2 cups shredded sharp cheddar cheese
  • 1 can (14.5 oz) diced tomatoes with green chilies
  • 1 medium onion, finely chopped
  • ½ cup ketchup
  • 1 tbsp yellow mustard

Instructions

  1. Preheat oven to 350°F (175°C) and lightly grease a 9×13 inch baking dish.
  2. Cook elbow macaroni in boiling salted water until al dente; drain and set aside.
  3. In a skillet over medium heat, brown ground beef for about 7-10 minutes; add onion halfway through cooking until tender. Drain excess fat.
  4. In another pan, cook chopped bacon until crispy, then drain on paper towels.
  5. In a large bowl, combine cooked pasta, beef mixture, bacon bits, diced tomatoes (with juices), ketchup, mustard, and half of the cheese. Mix well.
  6. Transfer the mixture to the prepared baking dish and top with remaining cheese. Bake for 25-30 minutes or until bubbly and golden brown.
