Ingredients

– 6 cups cubed bread (sourdough or French)

– 4 cups fresh spinach

– 8 slices bacon

– 6 large eggs

– 2 cups milk

– 1 cup shredded cheddar cheese

– Salt and pepper to taste


Instructions

1. Preheat the oven to 350°F (175°C).

 

2. Cook the bacon in a skillet until crispy, then crumble.

 

3. Sauté the spinach in the bacon drippings until wilted.

 

4. In a bowl, whisk eggs, milk, salt, pepper, and half of the cheese; fold in bacon and spinach.

 

5. Layer half the bread in a greased baking dish, pour half the egg mixture over it, and repeat layers.

 

6. Bake covered for 30 minutes; uncover and bake for another 15 minutes until golden.

 

Notes

– Make it vegetarian by omitting bacon or using mushrooms instead.
