Ingredients

  • 4 medium russet potatoes
  • 1 cup shredded sharp cheddar cheese
  • 2 green onions, chopped
  • ½ cup sour cream
  • 3 tablespoons melted butter
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Wash and peel the potatoes, then cut them into quarters. Boil in salted water until fork-tender (about 15 minutes).
  3. Drain and return the potatoes to the pot. Add melted butter, sour cream, half of the cheddar cheese, salt, and pepper; mash until smooth.
  4. Spray a muffin tin with nonstick cooking spray. Fill each muffin cup with the potato mixture and press down gently.
  5. Top with the remaining cheddar cheese and bake for about 20-25 minutes or until golden brown.
  6. Let cool slightly before serving warm topped with chopped green onions.
